We use 100% of the sweet potatoes called 'Kogane Sengan' nurtured by the nature of Minamisatsuma, Kagoshima Prefecture. To fully enjoy the aroma and rich flavor of this sweet potato, we use 'white koji' for fermentation. The shochu is slowly aged in unglazed earthenware jars for about 2 years in its original state, allowing the unique far-infrared effect of the jars to enhance the elegant and mellow taste, providing a refined and sophisticated flavor.
This barley shochu is made using handmade koji and carefully selected barley, utilizing the lightness of barley's characteristic mouthfeel through reduced-pressure distillation to create a refreshing flavor. Moreover, it is a barley shochu that pursues a light drinking experience while maintaining a solid barley richness, capable of withstanding long-term storage as the base shochu for the aged sake 'Hyakunen no Kodoku' and 'Tomen Nakanaka'.
