This is a cheese fondue made with only Gruyère cheese and Emmental cheese, following the authentic Swiss recipe. We stick to the traditional recipe to enjoy the original richness and aroma of the cheese.
We make it with about 2 kilograms of fatty Aurora salmon, using Laphroaig and rock salt. We are particular about cold smoking, resulting in a delicate balance of smoky aroma and salmon flavor.
Oysters are cooked at a low temperature in plenty of olive oil with large oysters and rosemary, so the oysters do not shrink. The oil also absorbs the flavor of the oysters, so enjoy it with a baguette ♪
