(Using soba from the Izumo Plain in the Hiigawa River basin, the setting of the Yamata no Orochi myth) We recommend the soba-yu (soba noodle water) served with soba shochu, which is a very delicious pairing!
(Using Nishihama sweet potatoes produced near Nagahama in the area of the Kunibiki myth)
Bottle 2800 yen
(Lemon, Grapefruit, Peach, Cassis)
When enjoying Izumo Soba, please chew the soba well to savor its original flavor. [1] On the first layer of soba, add your preferred amount of 'momiji oroshi, green onion, and nori' as condiments, then pour dashi over it. *The condiments are for three layers of soba. Please add them one layer at a time. [2] After finishing the first layer, pour the remaining dashi from that bowl onto the second layer of soba. If it's not enough, add more dashi to adjust the flavor. [3] The third layer is a repeat of [2]. [4] For the soba-yu, add dashi to taste and enjoy.
