The soy sauce broth of the motsunabe is Japanese-style, light yet rich in umami. The flavors include soy sauce, miso, and curry, and the time spent waiting for the vegetables to wilt and the sweetness of the cabbage to emerge is enjoyable. The soup has been carefully skimmed of excess fat, and the garlic and chili do not overpower, making it gentle on the stomach. When you order motsunabe, a small dish is served, which is just right for a palate cleanser. There is a wide variety of side dishes to enjoy, including chijimi, fried lotus root, beef tataki, and tamagoyaki. There are sunken kotatsu seats, which is nice because even with a large group, everyone can sit together.
