The bean dishes that cherish organic ingredients are all lined up, and it’s exciting from the very beginning. The freshly scooped yuba, deep-fried tofu, mushroom kenchin, and fried soybeans were particularly impressive. Each dish has a strong aroma and umami of beans, making it easy to eat even for those who are not fond of them. The sweet sake made from rice malt before the meal has a gentle sweetness that brings a sense of calm. The sound of water flowing by the soba is pleasant, allowing for a relaxed atmosphere to spend time slowly. The staff provides thorough explanations of the dishes, and some require reservations.
