Every ingredient is carefully selected and sourced from Okayama Prefecture. This is a steadfastly popular menu item at Yurin-an. 【Yellow Nira Soy Sauce】 This is Yurin-an's original yellow nira soy sauce, which contains the local specialty yellow nira from Okayama. It has a slightly sweet dashi soy sauce-like flavor that pairs perfectly with the egg and rice. This original soy sauce was developed through trial and error with a local soy sauce company that has been in business for about 150 years. 【Kurashiki Eggs】 Only eggs that have passed strict double checks by both machines and humans under thorough quality control for safety and security come to Yurin-an. Additionally, among the yolk levels from 1 to 15, Yurin-an uses eggs with levels 12 to 13, which have a rich color and flavor. The feed for the hens that lay these eggs is an original blend, including ingredients like paprika and marigold to enhance the yolk's vibrant color. 【Okayama Asahi Rice】 This rice is grown using the Kimura method of natural farming, made famous by Akira Kimura in the movie 'Miracle Apples.' The Okayama Asahi rice is cooked fluffy in a gas pot, using a meticulous approach to adjust the water amount based on the season and temperature. ★ Toppings of tenkasu (tempura scraps), furikake (rice seasoning), and ginger are available.
