The dipping sauce for the curry soba contains offal, cabbage, carrots, green onions, onions, and shredded kelp, and the aroma already stimulates the appetite. The rich curry is layered with the unique broth of a soba shop, creating a pleasant aftertaste. The soba is chilled in cold water, making it supple, and when dipped in the hot broth, it becomes just the right softness. When diluted with soba water, the flavor spreads gently, making it enjoyable as a soup as well. The nabe-yaki udon is bubbling hot, filled with shrimp tempura, mochi coated in batter, shiitake mushrooms, and other ingredients, providing a sense of satisfaction. The Chinese five-flavor salt dish has a clear broth with a noticeable bonito flavor, and the inclusion of offal adds a unique and delicious touch.
