The best Shirakawa ramen matches the culture of Nishiogi. The soup is mainly chicken broth, which again, after a night of drinking, is very soothing to the body. Nishiogi is a town of many drinkers, where bars are always lively at night. Around 1 o'clock after midnight, when I was hungry and wanted to go home with a bowl of ramen... the only option I had was Higomonzu. But after a few drinks, a bowl of Kumamoto ramen from Higomonzu is a bit heavy. This restaurant opened quietly in Nishiogikubo in September, and although I passed by it several times on my first visit, I was not sure where it was located, but it was stylish and relaxing. If you need a little more to drink, you can enjoy a lemon sour or sake with handmade raw konjak as a snack. After my first visit, I was so hooked that I went back several days in a row. The flat, frizzy noodles go well with the chicken broth, and the smoked chashu pork is another treat. If I had my way, I would be happy if the soup was hotter, but I guess that's the temperature of Shirakawa ramen...? I will go back.
