This sake conveys the careful craftsmanship of the brewery that has been felt over many years. Thanks to the soft brewing water from deep underground, the mouthfeel is very smooth. The Junmai Daiginjo has a calm aroma reminiscent of European pears, making it easy to pair with food. The liqueur combined with citrus has a refreshing scent, and when mixed with soda, it becomes even more pleasant. It does not have a strong koji flavor, which contributes to its gentle drinking experience. I was also happy to receive sake lees from the staff, which I enjoyed using in cooking.
