First, cabbage is served, which is refreshing and delightful. The skewers of chicken thigh and neck are tender and juicy, and the vegetables seem to be local. The sashimi of gizzards and the tataki of free-range chicken are fresh, colorful, and delicious. The grilled liver is rare, seared only on the surface, with no unpleasant odor and a smooth texture that leaves a strong impression.
