In a traditional small shop, as I passed through the noren (a fabric divider), the aroma of charcoal spread, whetting my appetite. The eel grilled right in front of me was crispy and fragrant on the outside, while tender and fluffy on the inside, which was impressive. The moderately sweet sauce enhanced the flavor of the eel, soaking into the rice and creating a delightful bite. Watching the steam rising from the steamer and listening to the sound of the charcoal made the waiting time enjoyable. The warm hospitality of the owner was comforting, and I was happy to chat about Kagoshima. The fluffy, melt-in-your-mouth texture made it hard to put down my chopsticks, and I finished it all in no time.
