It's been a while since I posted about noodles: 🙋‍♂️ Popular Chinese noodle shop. From Kadoya Shokudo, a quality restaurant. ▶︎Waemen (with Japanese soup stock) ¥900.- The best balance between green onion, bamboo shoots and chashu pork. Add Japanese soup stock to make it more like Chinese soba noodles. The soy sauce sauce has a sharp and sweet taste. The soup is a combination of animal broth made mainly from chicken and pork, seafood broth made from niboshi (dried sardines), akitobushi (dried fish bones), and salmon bones, and Japanese broth made from kombu (kelp) and dried shiitake mushrooms. All of the dashi broth's umami flavor is carried over to the soy sauce, increasing the sweetness of the broth. The noodles are flat straight noodles with whole wheat flour and medium water content. They carry the overall balance well using the strength and weakness of the soy sauce, and the flavor of the wheat matches well. It was my favorite ♡ of this Kansai expedition.
