There is a joy in mixing various Sri Lankan curries, and I am excited by the different aromas and richness compared to Japanese curry. The basmati rice is fluffy and can be eaten lightly even when mixed. The vegetables I encountered on the tasting plate, such as jackfruit, parippu, and beets, each have a straightforward and impressive flavor. The meat, like pork, is cut into smaller pieces and is tender, perfectly complementing the rich curry sauce and rice. The overall texture is well-balanced, and the combination of acidity, spiciness, sweetness, and umami feels great in one bite. The rolls and Sri Lankan cutlets have a crispy surface, and the fish and vegetable paste, along with the larger potatoes, are fragrant, leaving a refreshing aftertaste.
