In a small shop quietly located in an alley, as soon as you open the door, you are greeted by a row of counters. The three craftsmen in front of me speak little, but their rhythmic movements are pleasing to watch. When I asked for the chef's recommendation, they served two pieces at a time with a good tempo, allowing me to enjoy the sushi while the rice was still warm. The fresh and thick toppings paired well with the fluffy rice made from Hatsu Shimo from Gifu Prefecture, and I felt happiness with each bite. The bowl of tororo kelp and the kanpyo rolls were also made with care, and I understood the feelings of the regulars enjoying their drinks beside me. When I finished eating and was leaving, the craftsmen saw me off with soft smiles, warming my heart.
