The aroma of charcoal spreads gently, and I feel excited the moment I take my seat. The eel dish incorporates French ideas, and the domestic eel melts softly. The white grilled eel allows me to enjoy the crispiness of the skin and the tenderness of the flesh at the same time, which is very satisfying. The eel rice bowl is served separately from the rice, enhancing the crispy texture of the skin. Even without any sauce, the saltiness is just right, and adding some sansho pepper halfway through makes for a delightful change in flavor. The uzaku made with carrots has a refreshing acidity that pairs well with alcohol.
