A dish consisting of alternating pieces of chicken thigh or breast (in the case of don, chicken thigh) and green onions. Also known as hasami or torinegi. It is one of the most popular types of yakitori at don. Originally, it referred to green onions and tuna, but it came to be called this because chicken was used as a substitute for tuna. Since green onions are placed between the pieces of chicken thigh, you can enjoy the tenderness of the meat and the crispiness of the green onions alternately.
The meat from the part of the leg from the hip down, a classic choice for yakitori that is very popular. The texture is slightly firmer than breast meat and has a rich flavor, containing relatively more fat. It has a bit more chew compared to breast meat, characterized by a rich taste typical of chicken.
It is alternately layered with chicken thigh and garlic. The collaboration of the tenderness of the chicken and the fluffy texture of the garlic is irresistible. Once you try it, you'll be hooked on the flavor. Be sure to give it a try before the weekend!
This is the meat from the tail part of a bird, and only a small amount can be obtained from one bird, making it a precious part. It is also called bonbochi or bonjiri. The fat content is excellent, and the juicy texture is exceptional. It is definitely recommended to grill it with salt.
It is a bird's heart. Hatsu is a transformation of the heart and is also referred to as 'kokoro'. You can enjoy both the bouncy texture and tenderness, and even though it is light, it has a juicy richness from the fat, making it very delicious. If you haven't tried it yet, please give it a try at least once. You can choose either salt or sauce according to your preference.
When you think of liver, you might associate it with the liver organ, but this is part of a bird's stomach, specifically the part known as the 'sand pouch.' It is also referred to as 'zuri' or 'sunazuri.' It has a mild flavor and a delightful crunchy texture. Grilled with salt and enjoyed with beer is the best! It is rich in vitamins and iron, and low in calories, making it a safe choice for women. It's a popular menu item, so be careful as it may sell out!?
The skin from the peach, chest, and neck area. In don, only the neck skin is used. The outside has a crispy texture, while the inside is soft and chewy. It is popular among women for its high collagen content, which is good for beauty and health. Generally, it is strongly associated with grilled with sauce (as shown in the picture), but grilled with salt also has an irresistible crunch. Please give it a try at least once.
Liver is the liver part of chicken. It is rich in nutrients, containing four times the amount of vitamin A and vitamin C compared to eel. It is also abundant in minerals like iron, low in calories, and very good for the body. It is especially delicious when freshly grilled, so please enjoy it within three minutes. It is medium-rare inside and melts in your mouth♪ For those who say, 'I don't like liver...' this is a proud dish we definitely want you to try. You can choose between grilled with sauce or grilled with salt, according to your preference.
The wing part of the bird is divided into three sections: the wing tip, the middle wing, and the wing root. The wing tip is the end part of the wing. It is a section rich in gelatin and fat, with less meat, but you can also enjoy the tendons, skin, and cartilage. Squeeze some lemon on it and go ahead and dig in!
Our tsukune is made from a meat called 'seseriminchi,' which is rich in fat from the neck, combined with four types of aromatic vegetables and six kinds of seasonings. It is carefully kneaded by hand and grilled to perfection. Unlike typical tsukune, it features a fluffy and smooth texture that gently breaks apart in your mouth. The secret ingredient is drained tofu. By adding an appropriate amount of tofu that has been drained overnight, we achieve a light and airy mouthfeel. Additionally, we offer a variety of toppings such as tsukune cheese, ume shiso tsukune, tsukune wasabi mayo, tsukune mentaiko mayo, and tsukune with a raw egg, allowing you to enjoy different flavors. Our popular menu items also include tsukune with grated daikon and ponzu sauce, and takoyaki-style tsukune. We encourage you to try various options when you visit us.
We placed melted cheese on our proudly hand-formed tsukune. The mild tsukune and the richness of the cheese are a perfect match! It pairs well with both beer and shochu, making it a popular choice among women.
