As soon as I passed through the noren into the calm interior with a wooden theme, I felt a sense of excitement. The staff moved efficiently, and the smoothness of getting to my seat left a good impression. The freshly made udon was glossy and white, and I was surprised by its firmness and smoothness with just one bite. The golden broth, rich in umami from kombu, pairs perfectly with the noodles whether hot or cold. The tempura of burdock served on a separate plate was light and crispy, and when dipped in a little matcha salt, its aroma was further enhanced. The seasonal mixed rice was also infused with a gentle dashi, and I left feeling completely satisfied.
