Yuba is very smooth and delicate, with the sweetness of soybeans gradually spreading. Thick fried tofu has a rich flavor and pairs well with curry. The miso-marinated deep-fried tofu is soaked in a local sweet and salty sauce, which is comforting. That deep-fried tofu is juicy all the way through, providing a satisfaction similar to meat. The okara donuts are small, with a simple sweetness and a gentle handmade texture. I can enjoy the umami of beans in various forms, and it makes me happy every time.
