In a calm interior, you can spend time leisurely while gazing at the mountain scenery. The soba made from locally sourced buckwheat, ground with a stone mill and prepared with the famous water from Mount Gassan, has a rich aroma and a firm texture, making it pleasantly smooth to eat. The dipping sauce has a strong umami flavor from bonito and kelp, with a gentle spread of seafood aroma. The freshly grated daikon and the mild sweetness of wasabi further enhance the flavor of the soba. The freshly fried squid tempura, mountain vegetables, and shrimp tempura have a thin and light batter, releasing a delightful aroma with every bite. During the wait, I was able to observe the soba-making process and was impressed by the artisan skill of cutting it thinly in a lively rhythm.
