These noodles have no unnecessary additives and possess the freshness unique to fresh noodles. The soba is thick, with a chewy texture and strong elasticity that is irresistible. When boiled and quickly chilled in cold water, the aroma spreads beautifully, making it the best. The herring is plump and tender, and it pairs excellently with the soba. The black udon has a chewy texture that feels gentle on the body and is delicious. There are also varieties like Hanagasa soba and yomogi soba, allowing you to fully enjoy the rustic countryside flavor.
