In a sushi restaurant that blends into the local atmosphere and has a calming vibe, just passing through the noren (curtain) brings a sense of relief. The tuna seems to be directly delivered from Toyosu, and its glossy red flesh melts in the mouth. The handmade pickled mackerel has a mild vinegar flavor, allowing the natural umami of the fish to shine through. The sushi rice is slightly larger, but it is gently pressed, making it easy to eat. The light broth udon has a gentle taste and pairs excellently with the sushi. The high-quality sea urchin sushi is rich and sweet, making it impossible to put down my chopsticks until the very end.
