Upon entering the restaurant, the first dish served is smooth tofu, with the miso on top providing a nice spicy accent. The freshly boiled soba noodles have a rich aroma and a pleasant elasticity that increases with each bite. The unique flavor of 100% buckwheat is distinctly felt, and even the soba broth is delicious. The freshly fried tempura has a light batter that enhances the natural flavors of the ingredients. The duck soba has a delightful umami from the broth and a fragrant hint of yuzu, pairing well with the green onions. You can enjoy it by changing the flavor with sansho pepper and chili, making it a satisfying meal that reflects careful craftsmanship.
