Shinshu beef is tender, and the more you chew, the more flavor it releases. In sukiyaki, you can adjust the sweetness to your liking, and it pairs very well with egg. For shabu-shabu, two types of dipping sauces are provided, allowing you to enjoy the difference in flavors. The ramp steak goes well with a robust grated sauce, and it is satisfying to have plenty of vegetables served alongside. The thin Karuizawa soba has a good texture and feels pleasant going down. The hoba-yaki has the aroma of Shinshu miso that whets the appetite, and it's enjoyable to grill it gently with ingredients like shimeji mushrooms and onions.
