The restaurant is a bit away from the city, but it is quite popular, with almost all the seats filled during lunchtime. The murky soy sauce-based soup combines the richness of pork bones with the umami of dried sardines and chicken, making it impossible to stop using the ladle. The homemade medium-thick curly noodles are smooth and chewy, providing a pleasant elasticity with every slurp. The spicy topping of diced chashu and stir-fried bean sprouts is enough to make you sweat, and it pairs perfectly with the noodles. The aromatic menma and refreshing roast chashu, while secondary, also have a strong presence. Despite being very filling, I was able to finish it without getting bored, and it was a thoroughly satisfying bowl.
