The noodles have a characteristic Okinawan elasticity, and the flavor of the broth spreads as you chew. You can choose from various types of meat such as soki (pork spare ribs), sanmai-niku (pork belly), and nankotsu (cartilage), all of which are tender and flavorful. The pickled ginger adds a nice accent, creating a good overall balance. There is also a set that comes with a juicy daily side dish, and having mozuku (seaweed) in between enhances your appetite. Adding a little kochujang (chili pepper sauce) from the table enriches the aroma and adds a sharp spiciness that deepens the flavor of the soup.
