It's fun to savor while grilling slowly on a shichirin (a small charcoal grill). It's easy to access from either side of the station, creating a welcoming atmosphere. The beef tongue is seasoned and has cuts, providing a good texture and is very tender. The offal allows you to choose the level of spiciness, and you can enjoy a variety of cuts in a mixed platter. The sashimi of heart can be paired with either ginger soy sauce or garlic soy sauce, allowing you to customize it to your preference. The salad of shungiku (chrysanthemum leaves) and tuna has a pleasant sesame flavor, and the spiciness of the kakuteki (radish kimchi) adds a nice accent.
