The techniques of Edomae shine through, and each dish reflects meticulous craftsmanship. The flounder marinated in kelp brings out a moist umami flavor, providing a pleasant mouthfeel. The red meat marinated in kelp is also rare and surprisingly delicious. Among the appetizers, the squid salted with yuzu and the cod milt enjoyed with salt leave a lasting impression. There are not only nigiri but also sashimi and chawanmushi, making it enjoyable to think about the combinations. It's also delightful that the more I visit, the more they remember my preferences and casually suggest the day's recommendations.
