The signboard dish, Katsuura Tantanmen, has a strong red appearance, but the spiciness is just right, and the soup goes down smoothly. The noodles are slightly thin with a light curl, which holds the soup well. The toppings include plenty of ground meat and onions, and the accents of white leeks and garlic chives are enjoyable. The soy sauce-infused chashu is satisfying and has a good texture.
