Nestled quietly in a residential area just off the station, the restaurant has a noren (curtain) hanging at the entrance, and upon opening the door, a calm space with only a counter unfolds. The chef carefully adjusts the heat on a four-tier grill, ensuring that each skewer is crispy on the outside and moist on the inside. The negima (chicken and green onion skewer) has a crispy skin that bursts with juicy meat, perfectly complementing the sweetness of the green onion. The liver, prepared at a low temperature, melts like a liver pâté, and I was moved by the aroma of charcoal and its deep richness. The vegetable skewers, including zucchini and ginkgo, also had an enhanced sweetness, making them delicious enough to be the main attraction rather than just a side dish. The rich chicken broth I had after the meal gently enveloped my stomach, leaving a happy aftertaste as I left the restaurant.
