The Japanese food is all carefully prepared, with each dish having a distinct balance that matches the ingredients. The sashimi, especially the red meat of the bluefin tuna and the flounder, is very good, and you can really taste the umami. The only raw dish is the sashimi, while the other dishes are cooked to perfection with just the right amount of flavor. The appetizer of squid mixed with spicy cod roe and the baked crab with sauce were also delicious. There is a wide variety of local sake, which can be enjoyed alongside Daishinshu, Kirinzan, and Sakunohana. The presentation and the combination of the dishes and tableware are beautiful, and I was satisfied even with the final tea and pickles.
