The aroma of buckwheat is strong, and the moment you slurp it, the fragrance wafts up. There are several varieties, making it fun to compare them. The 'hisui' variety has a gentle flavor that glides in smoothly, while the 'genbaki' variety has a robust taste. The dipping sauce is sharp and firmly supports the quality of the noodles. It's also convenient to choose the amount by grams, allowing you to enjoy it at your own pace. The tempura can be ordered as a single item, and the straight-fried shrimp had a particularly pleasant texture.
