Forest soba
The head chef uses domestically produced buckwheat flour and alkaline ion water to hand-make the noodles. The soba broth is made by slowly extracting the broth using domestically produced thickly shaved bonito flakes as the base, adding soy sauce, mirin, and sugar without any chemical seasonings, preservatives, or additives. Enjoy safe and secure soba.
