Matsumaeya, one of the oldest establishments in Kyoto, has an overwhelming history dating back to 1392 and is run by the 32nd generation of its owner. Of particular note is the "kiwuhi kelp," a product that has been passed down from one generation to the next. It takes six years to produce, and the sales period is limited. The kombu has a slightly sweet taste in the mouth, which is completely different from other kombu. I was impressed by the technique of Matsumaeya, and was also overwhelmed by the appearance and structure of the store, and felt the depth of Kyoto's history.
