It's nice to have a small space with just a counter where they cook efficiently. The dough is fluffy and thick, and the flavor of yam makes it light to eat. The modern style of sandwiching the noodles between the dough has a beautiful layer and is satisfying to eat. The sauce has a mild acidity, and you can also enjoy changing the flavor with the spicy sauce at the counter. They serve the finished dish on a small iron plate, so it stays hot and delightful until the end. Their commitment to ingredients and the daily changing snacks are also appealing, and I'm tempted by the sobameshi and yakisoba.
