I was excited to learn that the miso shop in the brewing town of Setadaya is committed to using natural domestic ingredients and traditional methods. The store has a wide variety of miso, ranging from one-year to three-year aged, and even the ultimate ten-year aged miso is available, which is thrilling. There are also specialty misos made with barley, rice, and soybeans, making it fun to choose. When made into miso soup, it spreads a nostalgic aroma and umami that deepens with daily use. The pickled daikon has a strong miso aroma, and its saltiness and crunchiness are addictive. I felt that it was a highly satisfying shop where you can consult and choose what suits your taste if you're unsure.
