【Tokyo Kichijoji】 Chef Omura is a beloved disciple of the legendary Tomikawa, who has been awarded the Michelin star for 11 consecutive years as a goodwill ambassador for Japanese cuisine at the Hotel Okura Amsterdam in the Netherlands. With innovative ideas drawn from his overseas experiences and the skilled techniques inherited from the legend, the newly opened "Sushi Tomikawa" is already becoming a sought-after restaurant with difficult reservations. Seasonal sushi and appetizers, omakase, 22 items ◇ Homemade gari (pickled ginger) ◇ Instant smoked Spanish mackerel When the glass lid is opened, a gentle smoky aroma spreads. ◇ Vongole (clams) The white is prepared with dashi soy sauce, and the black is marinated in balsamic vinegar. ◇ An-kimo (monkfish liver) bread A specialty. This is a different level of "anpan" (sweet red bean paste bun) compared to regular anko bread. The an-kimo has a hint of orange, giving it a sweet and sour taste. ◇ Squid ◇ Chutoro (medium fatty tuna) A luxurious experience with two pieces of different cuts, belly and back. ◇ Aburi shimesaba (seared mackerel) The fat was rich and delicious. ◇ Abalone chawanmushi (steamed egg custard) When you put a spoon into the liver sauce, mashed potatoes and flower pet mushrooms come out, which is quite interesting. ◇ Barracuda The pairing of pear gari and children's peaches as a side is innovative. The chef's smile is perfect too. ◇ Grilled eel, kabayaki (grilled eel with sweet soy sauce) ◇ Tempura of wakasagi (sweetfish) The side dish is a salad of watercress and mushrooms. ◇ Anago tamago A specialty. A novel dish where anago (conger eel) is wrapped in sushi rice with an egg placed in the center. ◇ Kuruma shrimp ◇ Oyster It's quite rare to have it as sushi. ◇ Sea urchin and caviar A luxurious dish in both appearance and taste. The caviar is original. ◇ Inari sushi ◇ Soup ◇ Dessert Cheese castella, sake lees & pistachio & fresh cream ice cream. The course includes drinks. You can also order a la carte from the special menu. Personally, I recommend pairing from the second drink onwards, and the lineup of dry sake was excellent. The sommelier and other staff were all warm and welcoming, making it a cozy hideaway restaurant. Thank you for the meal.
