The handmade thin soba noodles are firm and have an excellent texture. I was impressed by the rich aroma, as I heard they use buckwheat flour ground in a stone mill from Shinshu. The gentle Kansai-style dashi is smooth and pairs perfectly with the umami of the tempura. The vegetable tempura includes a variety of ingredients like eggplant and lotus root, and the crispy texture is delightful. The tempura of young sweetfish has a slight bitterness that evokes the season, making it hard to put down my chopsticks. The tatami and table seating create a calm atmosphere, allowing for a relaxed dining experience.
