What we want you to enjoy with our unchanged method and seasoning for fifty years at Hatsuzushi is a plate full of large eel. The rich and sweet sauce (tare) has remained unchanged for fifty years. The eel is slowly simmered in its own broth and prepared with a continuous process. The eel, cooked to match the rich flavor of the sauce, is finished with a refreshing taste to ensure that the original texture and umami of the eel are preserved.
Fresh yellowfin tuna is delicious even when grilled! The rich aroma of our special soy sauce and butter pairs perfectly. We grill thick, fatty, and fresh yellowfin tuna to a savory finish. It's a great accompaniment to sake.
Once you try it, you'll be hooked! The aroma of the dashi is light and fluffy. The tamagoyaki is baked fresh every day at the shop, using plenty of dashi. The eggs are from Abe Shop, known for their rich flavor, and we cherish the natural taste of the eggs, allowing the aroma of the dashi to spread as soon as it enters your mouth.
