We visited "Bamboo Shoots Restaurant" in Tsukahara, Kyoto, where Japan's finest bamboo shoots are grown, in search of spring delicacies and a full course of bamboo shoots. Bamboo Shoots Restaurant is located in a bamboo grove and is known by those in the know. The restaurant has several rooms in a separate building and is visited by celebrities from all walks of life. We made a reservation one month in advance and selected the Katsura room where we could have the bamboo grove all to ourselves. We selected a course that included sashimi and grilled albacore, a rare fish produced in Tsukahara. The sashimi was a taste that made us recoil. The aftertaste is like sweet milk. All dishes are exquisite, prepared by a chef who knows bamboo shoots inside and out. The fried dish is arare deep-fried. The beautifully colored, crispy arare and the crunchy bamboo shoots create a harmony of textures. The dish is served in a pretty container in the shape of a bamboo shoot. For those who love bamboo shoots, this is a must-visit restaurant.
