Making soba noodles with a pasta machine! No knives are used, so even small children can participate safely. The freshly made Soba made by yourself will probably be the most delicious and delightful Soba in your life!
A popular menu item featuring tender, falling-off-the-bone bone-in chicken confit, slow-cooked for 12 hours, served in a base of ratatouille that concentrates the flavors of vegetables and soba dipping sauce.
We blend 100% domestic buckwheat flour with fragrant sweet husks. Using natural water from Koganei, 'Golden Water', we knead the dough 2 to 3 minutes after receiving your order. A large serving of 100% soba is an additional 2200 yen, and we use an extruder pasta machine to make the noodles just before boiling, ensuring that the aroma is preserved for a delicious experience.
