The sushi prepared by the chef who honed his skills at a famous restaurant in Tokyo exceeds expectations from the very first piece. The salad features well-chilled vegetables drizzled with a creamy sesame dressing, raising the excitement right from the first plate. The chawanmushi (steamed egg custard) is gently infused with dashi, and the aroma of mitsuba (Japanese wild parsley) and ginkgo spreads softly. The nigiri has thick, fresh toppings, and the harmony with the rice is exquisite, bringing a smile to my face. The flavorful arazuke (fish soup) packed with blue fish umami and the moist tekka maki (tuna roll) made it hard to put down my chopsticks. The final dish, battera (pressed sushi), released a burst of flavor from the tightly packed vinegared rice, and I left the table completely satisfied.
