The seating includes tatami tables and a counter on the first floor, and a sunken kotatsu on the second floor, allowing for a relaxed atmosphere. The Miyuki pork cutlet is impressive, with a strong sense of the sweetness and juiciness of the fat. In addition to sauce, it comes with rock salt that you can shave yourself and grated daikon, allowing you to enjoy variations in flavor. The Shinshu colorful meal features many small dishes, and the grilled wheat gluten and pickled korinkyi were particularly memorable. Following that, soba noodles from Togakushi and tempura were served, and the combination of maitake mushrooms, yacon, and apple was light and crispy. The final dessert, made with kudzu, was also light, making for a meal that felt inventive and full of local blessings.
