In a small shop located under the train tracks near the station, the aroma of kimchi wafts out into the street. The owner greets you warmly, making it easy to choose even for first-timers. The napa cabbage kimchi prepared that morning is lightly pickled, with sweetness and umami coming first, followed by a moderate spiciness that spreads later. It is securely wrapped in plastic, so you can carry it without worrying about spills. After returning home, I enjoyed the changing flavors day by day, transitioning from sweetness to spiciness, and then to sourness as it fermented. It’s not too spicy, so the whole family can enjoy it, and before I knew it, the bag was empty.
