Date and time of your visit: 12, 2019 Dinner

Enjoying a work of art in the name of cuisine We visited this restaurant for dinner. I had been curious about this restaurant for a long time, but it was always full of reservations even when I visited on a whim. So we made a reservation and visited the restaurant! On that day, I chose the 4-course menu for 4,500 yen. Appetizer of Shimonita leek and milt Mackerel, strawberry and parsley terrine is a specialty of this restaurant! Mont Blanc of prune, shiitake mushroom and duck Camouflage sheet instead of sauce on Ezo deer and conger eel Drinks were paired, but I drank too much and had a glass of red and a glass of white! All of the dishes were very elaborate and thoughtful! The prodigal milt with kumquat flavor was a new experience for me, but it was very tasty and new to me! The Mont Blanc as a meal was sweet, but the complex intertwining of the flavors of the large shiitake mushrooms, prunes and duck was unmistakable and unique to this restaurant! The only thing that bothered me about the fish was that the bones were not processed properly. The taste was good, but I thought it would affect the texture of the terrine. Each dish comes with several sauces, so you can enjoy different styles of sauces. The sauces are in the form of sheets that slowly melt at the temperature of the dish. Each dish was a feast for the eyes! As for the wine selection, I could feel the restaurant's attention to the selection, and for an amateur wine lover like me who only likes wine but has no knowledge of it, they showed me some unknown tastes! The wines were perfectly matched with the dishes, and there were wines that had such a unique character that I wondered what else would go well with them! Overall, as you can see on the restaurant's social networking site, the concept is "Gastronomy as a subculture"! It's not a classic French restaurant, but a place to discover something new! I felt that the cuisine here is not a "meal" but a "work of art" as far as possible, which is the right description! To be honest, as a classic lover, this was not the French cuisine I was looking for! However, tokiya's creations give us a new insight into how something as simple as a meal can be enjoyed in this way! I would give it a 3.4 on the taste scale, with 0.1 for the interesting wines! I usually only revisit places that get a 3.5 or higher, but this one I will definitely visit again! Thank you for the food!
