Aged Venison We visited this restaurant because it had a stall at the France Week held at Isetan Shinjuku. Poiret of aged venison. There is no smell at all, and only the taste of the meat (umami) is brought out. It is the best taste. I would rather have people who don't like game eat it. 【東京 中目黒】 3年連続ミシュランビブグルマン獲得！ 韓国料理と日本料理の新感覚フュージョンを楽しめる、実力派レストラン。 中目黒駅から少し離れて落ち着いた立地と、重厚感のある豪華な店内に期待値も高まる。 <若狭韓定食> ◇5種のパンチャン：菊の花、烏賊の塩辛、オクラ、そら豆、いぶりがっこキムチ → パンチャンとは朝鮮料理でご飯と一緒に食べる、日本で言う「おかず」のこと。最も代表的なのはキムチ。独創性豊かな5種の素材に、お酒のすすむ味付けがまさに至極のアテ。 ◇ムルフェ → ムル（물）＝水、フェ（회）＝刺身 という名の通り、冷たい甘辛いスープに新鮮な刺身と野菜が入った料理。イクラが良い味を出している。夏の暑い日にぴったり、夏バテ防止にもなる一品。 ◇宮廷ポッサム（別名ポッサムキムチ） →キムチの王様。季節によって変わる素材を包み込み漬け込んだ、さほど辛さは目立たない上品な味のキムチ。今回はヒラメ、金目鯛、梨という驚きの素材。ちゃんと一つ一つの味が感じられて美味。目の前でカットしてくださるので食べやすい。 ◇熊本のヒレスユック →スユクとは牛肉や豚肉を茹でたシンプルな料理のことで、豚肉のスユクをサンチュなどの葉野菜に巻いて食べるとポッサムという名前になる。低温調理されたあか牛は流石の柔らかさ。淡路島の玉葱のソースがこれまた絶品でとても美味しい一品。 ◇季節の野菜や海鮮のチャプチェ →チャプチェは漢字で「雑菜」と書き、幾種類もの野菜、きのこ、牛肉などを細切りにして炒め、韓国式の春雨と混ぜ合わせて作る料理。普段口にする茶色いチャプチェと異なり、塩ベースで茶色くないチャプチェは初めて。中の具材はズッキーニのような色と形をした"韓国カボチャ"に、真蛸。上から自家製カラスミをかけていただき、何とも贅沢な一品。カラスミは大人気の美味しさ。 ◇トッカルビ →牛のカルビ、つまりあばら骨の周りの肉を骨から外し、包丁で叩いたあと骨に埋め戻し、焼いて食べる全羅道の郷土料理。 カルビを包丁で叩くため、「餅を搗くようにつくる」という意味で、トッ（餅）という言葉がついたそう。韓国はほぼユッケで提供されるが、ここは日本なのでちゃんと火を通して出してくださるとのこと。ハンバーグのような味わいというのが確かにちょうど良い。山形県産のエノキもジャンボで食べ応え十分。 ◇選べるメイン：4種からプルコギを選択。 →プルコギと言ってもイメージする油っぽいお肉ではなく、まるでハラミ！重たさゼロ、五島牛の赤身は柔らかい上に旨味が素晴らしく、非常に美味しかった。付け合わせの夏野菜も良き。 ◇選べるスープ：4種からタッカンマリを選択。 →初来店なら海鮮チゲかタッカンマリがおすすめとのこと。ホロホロの比内地鶏にこの白濁したスープはきっとみんな大好き。味変で辛口にもできる。 ◇選べる〆：10種から冷麺ハーフ、ユッケジャンをラーメンにしていただきハーフを選択。 →ユッケジャンと今回頼まなかったコムタンはスープかと思いきや、麺を投入してラーメンにすることもできるという嬉しさ。何より、全品サイズも選べる（一口、ハーフ、フル）のが素晴らしいポイント。こんなに種類があったらたくさん悩んでたくさん頼みたくなる。10種だなんて調理場は大変になるかもしれないが、その分お店自体を1回転制とすることで、"〆はたくさんの選択肢から一人一人好きな韓国料理を楽しんでもらいたい"というお店の意向があると、素敵なエピソードを伺った。 ◇デザート：わらび餅　緑茶のソース プリンかと思いきやソースは、大人っぽいお茶の味でするする食べられる。とても美味しい。 総括として、正直これまで食べてきた韓国料理の概念をガラッと塗り替えられる、素晴らしい食体験。 日本の新鮮な食材も多く取り入れられていて、まさに日本×韓国の巧みな融合に感動した。 サーブ、料理の説明をしてくださる若狭オーナーは、抜かりない接客技術で魅了され、またお話も愉快で、本当に楽しいひとときを過ごせた。 ご馳走様でした。また伺いたいです。
