The atmosphere is like an old traditional house, and it is very clean and comfortable to spend time in. The soba noodles made in front of the shop have a wonderful aroma, and it's fun to compare the different styles of preparation. The flat noodles pair well with the dipping sauce, and the combination with duck fat and green onions is outstanding. The thin noodles have a firm texture, and the sweet and salty dipping sauce enhances their flavor significantly. The very coarse noodles, when tasted with salt, release a fragrant aroma, and dipping them in the sauce brings out a different deliciousness. The finishing soba broth is thick and aromatic, providing satisfaction until the very end.
