In a calm space reminiscent of a traditional Japanese farmhouse, the cooking process is visible and exciting. The handmade soba, made from home-milled flour, is fragrant, and the assorted platter for tasting is enjoyable. The dipping sauce, rich in the flavors of dashi and soy sauce, makes even the soba broth delicious. The chilled tanuki soba is served with tempura bits on top, and since the dipping sauce is separate, it's easy to adjust to your preferred thickness. The sweetness of the vegetable tempura, the plump texture of the chicken tempura, and the slight bitterness of the wild vegetables are also impressive. The lightly grilled chicken soba enhances the flavor of the dipping sauce, and there is also regular soba dipping sauce available for personal enjoyment.
