In a small shop located in the market, as soon as you sit at the counter, the fragrant smell of dashi spreads around. The dipping sauce is packed with the umami of duck and niboshi, and while it has a rich fat content, it leaves a refreshing aftertaste. The udon has a texture that is hard to believe is frozen, and its smoothness pairs well with the dipping sauce. The generous portion of tender duck meat in the bowl, along with sliced daikon and burdock root, makes for a nice palate cleanser. After finishing, pouring in the ginger-infused broth and sipping the soup while nibbling on lemon warms the body. This bowl, where richness and freshness coexist, is delicious enough to become addictive after just one try.
