Located on the second floor of the Kawamata Road Station, Soba Roku is a beloved soba specialty shop in the local area. The extremely thin hand-made soba showcases finely crafted noodles and high technical skill. It was located on the second floor of the roadside station, and I was delighted to be served tea and soba crackers upon entering. It was enjoyable to wait while nibbling on the fragrant crackers, and the texture was pleasant. The thinly cut soba was smooth and easy to swallow, with just the right amount of firmness that made it enjoyable to slurp. The warm broth with Kawamata chicken was full of ingredients, and the flavors of shiitake mushrooms, burdock, watercress, and green onions were infused throughout. It was exciting to see the soba being made, and the serving of the seiro was quick, while the tempura took just a little longer. The vegetable and shrimp tempura were crispy, and the aromas of chrysanthemum leaves, pumpkin, eggplant, and onion were delightful.
