Chomei soba is recommended with plenty of condiments. Thin and firm buckwheat flour is used for a good thirst-quenching effect. Iri-soma (sesame seeds) in a mortar is rubbed and added to the soup stock to make it go well with the condiments. The soba-yu (buckwheat paste) served is also surprisingly rich and light. The collaboration with local vegetables made for a simply delicious lunch.
